Join the delightful Dia Berry and learn to cook Laab Gai, a spicy chicken dish. She will also show us how to make Pad Thai, a favorite Asian comfort food.

Laab (aka larb) is a famous dish that is iconic of northeastern Thai food, and this version uses chicken, making it laab gai. It’s spicy, tart, and fresh…few things satisfy the palate the way laab does. It’s no wonder it’s one of the most popular dishes in Thai restaurants around the world!  It is probably the healthiest chicken salad ever, with fresh flavors from hers and lime, plus a hint of chilli, and one of the easiest Thai dishes to make. Bundle it up in lettuce or serve it over rice. A perfect Summertime dish!

Pad Thai’s wonderful blend of flavors and textures with a sweet, salty sauce over a umami rice noodle and vegetable stir fry is another recipe Dia will show us…particularly how to make the wonderful sauce.

These are both meals that will make you forget you’re eating healthy! Quick and easy to make and full of fresh flavours!

Dia Berry

Born in Suphanburi, Thailand, Natita “Dia” Berry has been preparing delicious Thai food throughout her life. Along with her brother, a respected chef in Bangkok, she learned her craft while sitting in the laps of her mother and grandmother, both accomplished family cooks. Since she moved to the States with her family in 2019, Dia has enjoyed offering informal Thai cooking demonstrations to family and friends. She is looking forward to sharing her country’s famously healthy and generously-flavored food with her Chesapeake Forum students.
