“Ever so slowly, throughout a season of alternating golden sunshine and silver rain, our olives turn from green to purple-black. We are impatient for their ripeness. We wait till the fruit is almost black, the best time for gathering the olives; the moment that offers the best bouquet and the lowest acidity.”
More than a quarter of a century has passed since Ginda wrote these words, the year of their first olive harvest. Today, she would like to share the story of their olive trees, how the trees have blessed their lives in ways they could not have imagined back then. And then there is the richness of pure virgin olive oil with its healing benefits, not just for body, but also for soul.
Their first modest harvest of 100 kilos was pressed at an ancient stone mill in Tuscany that dates back to the 14th century and is still in operation. Harvests eventually grew to yield over a thousand kilos and are now pressed at a modern, state-of-the-art mill in Umbria. As Ginda shares this story, she hopes to impart some of the wisdom and the magic garnered over the years of harvesting olives by hand. Come taste the oil and take home some recipes!
